    This is the perfect salad for those of us looking to keep things light, tasty, and utterly refreshing. It's all about combining the peppery bite of arugula and the tender sweetness of spinach, crowned with juicy tomatoes and the zest of Parmesan cheese.

    Ingredients Needed

    Ingredients: spinach and arugula, Parmesan, shallot, grape tomatoes, sliced almonds, balsamic vinegar, extra virgin olive oil, and salt and pepper.

    How to Make this Spinach and Arugula Salad

    This salad is designed to use those pre-packaged mixes of spinach and arugula. They are typically sold in 5 ounce bags; this recipe uses half a bag. I do this so I have fewer leftovers, as the greens will not keep well once they are dressed. If you need more to feed a group, just use the whole bag and double everything else.

    Place the greens in a salad bowl, then top with the tomatoes and slices of shallot.

    Mix up the simple dressing: balsamic vinegar, extra virgin olive oil, and a little salt and pepper.

    For additional depth in the dressing, I use a microplane and grate/mince some of the shallot, then whisk that into the dressing. Shallot has a distinctly garlicky onion flavor that really punches up the flavor!

    Pour the dressing onto the salad and toss lightly to mix.

    After tossing, I add the shaved Parmesan and the sliced almonds. I usually serve it just like that, without tossing again, as it helps prevent the cheese and nuts from sinking to the bottom and getting lost in the salad!

    Serving Suggestions

    This salad will go with anything! Use your air fryer or grill to cook up some chicken and have some of this salad on the side - it's delish!

    Substitutions and Variations

    Of course, you can totally make this salad your own. I like to use shaved Parmesan because I like the bigger bites of flavor, but shredded will work as well.

    No grape tomatoes? Use cherry tomatoes or even a cut up Roma tomato, if that's what you have on hand.

    The homemade balsamic vinaigrette is as simple as can be, but if you have a favorite balsamic dressing feel free to use it here!

    Ingredients
      

    • 2-3 ounces spinach and arugula mixed greens
    • ½ cup grape tomatoes cut up
    • ⅓ cup shaved Parmesan cheese
    • 6-8 slices shallot
    • ¼ cup sliced almonds

    Dressing

    • 3 tablespoons olive oil extra virgin
    • 1 tablespoon balsamic vinegar
    • salt + pepper to taste
    • optional: shallot, finely minced to taste

    Instructions
     

    • Add to a salad bowl the greens, cut up tomatoes, and sliced shallot.
      2-3 ounces spinach and arugula, ½ cup grape tomatoes, 6-8 slices shallot
    • Mix the dressing and pour over the salad. Toss gently to coat.
      3 tablespoons olive oil, 1 tablespoon balsamic vinegar, salt + pepper, optional: shallot, finely minced
    • Top with the Parmesan and almonds and serve.
      ⅓ cup shaved Parmesan cheese, ¼ cup sliced almonds

    Notes

    Feel free to adjust ingredient quantities to your preference: more tomatoes and/or shallot if you love those flavors, etc.

      I have fresh spinach, arugula, and tomatoes coming out of the garden so I decided to make your salad recipe. Wow, was your dressing the best!! It was super easy to make and my family loved it.
