    A mashup of coleslaw and broccoli salad, this broccoli slaw salad is low carb, yet creamy and delicious. Its a great way to serve a simple salad that delivers all the nutrition of broccoli without being obvious that it is broccoli!

    The dressing is creamy and sweet, but sugar free thanks to a sugar substitute. This is a great salad to add to your collection for summer meals, but also great year round for an alternative to coleslaw for pulled pork, fish, etc.

    Why You Will Love This Salad

    If you love creamy coleslaw, you'll love this salad, it's that simple. The dressing is very similar to what I use in my sugar free coleslaw.

    But using broccoli slaw means you are getting all that broccoli nutrition delivered in every forkful. I also added some reduced sugar cranberries to conjure some "broccoli salad" vibes, but you can omit those if you'd rather. I like the little burst of tart contrasting with the sweet. 😁

    Ingredients Needed

    Ingredients: broccoli slaw, green onions, apple cider vinegar, sugar free sweetener, mayo, and optional Craisins.

    How to Make Low Carb Broccoli Slaw

    So easy! The only prep required is to slice the green onions. I use 3 to 4, enough to get about ¼ cup of slices, cutting all of the white and light green.

    In a medium serving bowl, combine the dressing ingredients: mayonnaise, apple cider vinegar, and sweetener. Whisk it to ensure the sweetener has fully dissolved.

    Now add the salad ingredients to the same bowl: broccoli slaw, onions, and any optional add-ins. I use the reduced sugar cranberries to keep the sugar low, but if you need a keto option you might want to skip these.

    Now all you have to do is stir up from the bottom, distributing the dressing throughout the salad.

    Once mixed, cover and refrigerate the low carb broccoli slaw for at least 30 minutes to let the flavors fully develop. Toss again just before serving.

    Substitutions and Variations

    One of the most obvious substitutions is for the sweetener. Feel free to use whatever sugar substitute you have on hand. You might need to adjust amounts as not all sweeteners are created equal. When I use Swerve (erythritol) I use 3 tablespoons, for example.

    You can also add nuts. Try some sunflower kernels, sliced almonds, or pecans for an extra layer of flavor and texture!

    Storage

    Keep any leftovers in an airtight container in the fridge. The salad will keep for up to 3 days, but, just like coleslaw, the dressing will pull moisture form the veggies and with time you'll have increased liquid in the bottom of the container. It's still delicious though. 😋

    Ingredients
      

    • ½ cup mayo
    • 2½ tablespoons Truvia erythritol-Stevia blend
    • 3 tablespoons apple cider vinegar
    • 12 ounces broccoli slaw
    • 3 to 4 green onions sliced thin
    • optional low sugar dried cranberries ½ cup

    Instructions
     

    • In a medium bowl, whisk the dressing ingredients together until smooth and fully dissolved.
      ½ cup mayo, 2½ tablespoons Truvia, 3 tablespoons apple cider vinegar
    • Add the salad ingredients to the bowl and stir to combine with the dressing.
      12 ounces broccoli slaw, optional low sugar dried cranberries, 3 to 4 green onions
    • Cover and refrigerate for at least 30 minutes to allow the flavors to develop. Serve with all your favorite meals!
