    Sugar Free Coleslaw

    Creamy coleslaw made with a sweet but sugar free dressing. Delicious!

    Controlling the sugar in your salads and side dishes can be a challenge, and those sugars can really add up! Take creamy coleslaw, for instance. The dressing is sweet and tangy in a way we all love. But wouldn't it be better to have that coleslaw without any sugar?

    That's what I've created here: a creamy and delicious coleslaw with a sweet and tangy sugar free dressing. It's the perfect side for any fish dinner, and anything grilled, all summer long!

    Why This Recipe

    This coleslaw is based on the "recipe" my (now 94 year old) mother taught me. I made creamy coleslaw her way for years, without an actual written recipe.

    When I decided to reduce my sugar intake, I knew I needed to find a coleslaw solution because I simply LOVE coleslaw.

    I use a packaged coleslaw mix because why not keep it simple? The dressing uses Swerve (erythritol) as the sugar substitute and I feed it to my guy all the time - he has no idea that it's sugar free! Win-win!

    How to Make This Sugar Free Coleslaw

    With only 4 ingredients, you know it's easy right?

    Just mix the dressing ingredients together in a small bowl: mayo, vinegar, and the sweetener. Mix enough to make a smooth dressing, ensuring that the erythritol is dissolved and the mayo is smoothly incorporated.

    I use the pre-cut coleslaw mix for the easiest salad ever. Just pour the bag of mix into a bowl, and add the simple coleslaw dressing.

    Toss the salad gently to coat. Refrigerate until ready to serve.

    If desired, sprinkle with a little paprika to add color and a little earthy or smoky flavor.

    Variations and Substitutions

    I use Swerve sweetener, but feel free to use a sugar substitute of your preference. Always check to verify whether it has a one to one substitute ratio, not all do.

    I use full fat mayonnaise but light mayo will work just as well.

    I use white vinegar but you can substitute apple cider vinegar if you prefer.

    Ingredients
      

    • 14 oz package coleslaw mix or about 3-4 cups of shredded cabbage
    • ½ cup mayonnaise
    • 3 TB sugar substitute Erythritol or similar
    • 3 TB white vinegar
    • 1 teaspoon paprika optional

    Instructions
     

    • In a small bowl, mix the mayonnaise with the sugar substitute and vinegar until mostly smooth.
    • Place the coleslaw mix in a bowl and mix with the dressing.
    • Cover and refrigerate for at least an hour.
    • Optional: Sprinkle with paprika to serve.
