How to Make This Cucumber and Tomato Salad with Avocado and Balsamic
First, prep the vegetables and place them in your bowl. I use grape tomatoes because they are reliably good pretty much all year, but if tomatoes are in season feel free to use other varieties. I also use English cucumbers because they have a thinner skin, and therefore I don't need to peel. Again, your choice.

Mix up the simple dressing by whisking together the balsamic vinegar and extra virgin olive oil. Salt and pepper to taste.

If you are going to serve right away, you can add the avocado before mixing in the dressing. If you are making this up ahead of time, you might want to add the avocado last minute, as it will break down some.

Add the dressing and toss gently to coat.

Storage
This salad is best when fresh, but if you have a little left over, store it in the fridge in a covered airtight container. The avocado will start to break down, so be sure to eat the rest the next day. I love to enjoy it for lunch, with a little tuna salad or something similar.

Balsamic Cucumber Tomato & Avocado Salad
Ingredients
- 1 English Cucumber
- 10 ounces grape tomatoes
- ½ red onion medium
- 1 avocado large
- 2 Tablespoons Olive oil extra-virgin
- 2 Tablespoons balsamic vinegar
- salt and black pepper to taste
Instructions
- Chop the cucumber into bite sized chunks, halve the tomatoes, and slice the onion. Add all of these to a medium bowl.1 English Cucumber, 10 ounces grape tomatoes, ½ red onion
- If you are serving right away, cube and add the avocado to the bowl. Otherwise, reserve the avocado to add just before serving.1 avocado
- In a small cup or bowl, whisk together the olive oil and balsamic vinegar. Add a little salt and pepper and whisk again.2 Tablespoons Olive oil, 2 Tablespoons balsamic vinegar, salt and black pepper
- Add the dressing to the bowl and toss gently to combine.
- If serving later, cover and refrigerate, then cube and add the avocado just before serving.
