Fresh meets flavor in this healthy and easy salad made with cucumber, tomato, and avocado. This salad is a perfect way to take advantage of fresh, in-season produce, but I actually make it all year round.

The simple balsamic dressing is fast and adds a ton of flavor. And the finished salad will complement most any meal. Or have it for a light lunch on a hot summer day, to give yourself a boost of healthy nutrition without weighing you down!

Why You Will Love This Salad

So many reasons to love this salad!

    • Its fast and easy to make, and the ingredients are easy to source, year-round.
    • The salad is so healthy! Fresh veggies with a tangy balsamic dressing. It's even vegan!
    • It goes with pretty much anything, making it an easy last minute salad to put together. Lunch or dinner, it's always welcome on my plate!

    Ingredients Needed

Ingredients: Olive Oil, Balsamic Vinegar, Cucumber, Tomatoes, Avocado, and Red Onion.
Reminder to scroll to the recipe card for detailed quantities.

How to Make This Cucumber and Tomato Salad with Avocado and Balsamic

First, prep the vegetables and place them in your bowl. I use grape tomatoes because they are reliably good pretty much all year, but if tomatoes are in season feel free to use other varieties. I also use English cucumbers because they have a thinner skin, and therefore I don't need to peel. Again, your choice.

A bowl of halved grape tomatoes, sliced red onion, and chunked cucumber.

Mix up the simple dressing by whisking together the balsamic vinegar and extra virgin olive oil. Salt and pepper to taste.

Whisking balsamic vinegar with olive oil for the dressing.

If you are going to serve right away, you can add the avocado before mixing in the dressing. If you are making this up ahead of time, you might want to add the avocado last minute, as it will break down some.

Add the dressing and toss gently to coat.

    Storage

This salad is best when fresh, but if you have a little left over, store it in the fridge in a covered airtight container. The avocado will start to break down, so be sure to eat the rest the next day. I love to enjoy it for lunch, with a little tuna salad or something similar.

    Frequently asked Questions

How many does this salad serve?

Its about enough for 4 side salads, but feel free to make the portions a little bigger for just the 2 of you, or double everything if you have more people.

    What makes this salad healthy?

This salad is full of healthy fats from the avocado and extra virgin olive oil, veggie nutrition from the cucumbers, tomatoes, and onion, and has a burst of tangy vinegar which helps stabilize glucose levels. It happens to be vegan, heart-healthy, and Mediterranean inspired. I can't think of a single healthy diet plan that it would NOT be compatible with!
