    Make a quick batch of tuna salad and use it to stuff a ripe, delicious, in-season tomato. This is such an easy way to enjoy a protein-packed light lunch or dinner that will satisfy!

    By using the tomato you will skip right past the bread you'd normally grab for a tuna salad sandwich. And you won't miss it! This makes a delicious and nutritious low carb meal.

    Why You Will Love This Recipe

    • A tomato stuffed with tuna somehow feels a little more "fancy" than a good old tuna salad sandwich. And who doesn't want to feel a little special?

    How to Make a Tuna Stuffed Tomato

    There are really only 3 steps to this: make the tuna salad, prep the tomato(es), and stuff.

    Chopped celery.

    If you already have a favorite way to make your tuna salad, use that recipe. Here's mine: Mix a can of tuna (drained) with chopped celery, a chopped hard boiled egg, and some mayonnaise. Maybe a little salt and pepper but typically the tuna alone is salty enough for me.

    Now, prep the tomato. Wash it of course, and then remove the stem and core. I had a large and somewhat flat heirloom tomato which kind of dictated how I would prep. Once I removed the stem and scooped the flesh, it made a perfect receptacle.

    The hollowed out area made the perfect "bowl" to hold the tuna salad.

    Another approach I sometimes use is to cut the tomato in a star shape pattern and then basically scoop the tuna salad on top. It makes a nice presentation, and is the best approach when your tomato is more round in shape.

    Serving Suggestions

    This is a favorite light lunch or dinner for me, especially in warm weather. It's easy to adjust the meal size according to how large the tomatoes are. Multiple medium sized tomatoes or one really large heirloom tomato will make very satisfying meal! A simple green salad on the side can also round it out when I want a little more.

    Ingredients
      

    • 5 ounces tuna drained
    • 1 celery chopped
    • 1 egg hard boiled, chopped
    • 2-3 tablespoon mayonnaise
    • 1 pound tomatoes fresh

    Instructions
     

    • Make the tuna salad by mixing the ingredients in a bowl. Adjust flavors with salt and pepper according to your preference.
      5 ounces tuna, 1 celery, 1 egg, 2-3 tablespoon mayonnaise
    • Prepare the tomato(es) by removing the stem and scooping out the core. For a very round tomato, cut a star shape to open up the tomato.
      1 pound tomatoes
    • Scoop tuna salad in or on to the tomato. Serve.

    Notes

    Calculation estimates are based upon this serving 2 people. If you decide to split this between 2 meals for yourself, just use half of the tuna salad. Store the remainder in an airtight container in the fridge until the next day, then use it to stuff another tomato.

      So simple, so fresh, yet absolutely delicious. I have a few more weeks before my big tomatoes are ready in the garden, but I will be making this at least once a week until they're done for the season!
