A simple batch of tuna salad will stuff a delicious ripe tomato to make a light yet satisfying lunch or dinner!

Ingredients
  

  • 5 ounces tuna drained
  • 1 celery chopped
  • 1 egg hard boiled, chopped
  • 2-3 tablespoon mayonnaise
  • 1 pound tomatoes fresh

Instructions
 

  • Make the tuna salad by mixing the ingredients in a bowl. Adjust flavors with salt and pepper according to your preference.
    5 ounces tuna, 1 celery, 1 egg, 2-3 tablespoon mayonnaise
  • Prepare the tomato(es) by removing the stem and scooping out the core. For a very round tomato, cut a star shape to open up the tomato.
    1 pound tomatoes
  • Scoop tuna salad in or on to the tomato. Serve.

Notes

Calculation estimates are based upon this serving 2 people. If you decide to split this between 2 meals for yourself, just use half of the tuna salad. Store the remainder in an airtight container in the fridge until the next day, then use it to stuff another tomato.
