How to Make this Avocado Toast
First, choose your bread. Because I am watching my blood sugar I am careful about bread, I want to be sure it is a good multi grain bread, so I have a good balance of nutrition and taste. You could also use a keto or low carb bread if you have one you like. For me, the addition of avocado is enough to smooth out the glucose spike that bread can sometimes cause.
Of course, we need to toast the bread. While that is toasting, I like to halve the avocado and save the other half for another day.
Start scooping out the avocado and placing it on the toast. You can remove it by slices or just scoop with a fork and kind of smash it to spread, which I did here since the fork grooves help hold the feta cheese in place.
Now sprinkle the avocado toast with the crumbles of feta cheese and give it a good drizzle of honey.
Just a note about the honey: I have found 2 different sugar-free honey substitutes (on Amazon), and I love them both. One is Allulose-based honey and the other Monkfruit honey. Whenever I need a sugar free substitute for honey, I try both and they never disappoint. The allulose version is thinner, and the monkfruit is very thick. But the taste for both is spot on.😋
Now you might want to try a bite of this combination as-is. Its very tasty, but I do like one more element: a sprinkle of crushed red pepper flakes. The pepper gives a little surprise kick that really makes the taste buds sing. 🎶
Serving Suggestions
This avocado toast makes a great quick breakfast or snack, but if you are super hungry you can also add a poached or fried egg on top. Protein + healthy fats = the perfect combination!
