    Air Fryer Egg Bites with Sausage

    For easy breakfast meal prep, egg bites will always deliver. You can make your egg bites in the air fryer and add sausage to satisfy the meat lover cravings. I also add spinach and cheese to round out the flavors and nutrition.

    It's a great way to have a grab-and-go breakfast available all week long!

    Ingredients Needed

    How to Make these Egg and Sausage Bites in the Air Fryer

    Lets start with the sausage, because it has to be pre-cooked. You can fry up some loose sausage in a skillet if you have it. I usually like to make some breakfast sausage patties and use 2 of them in these eggs bites.

    Just cut them up nice and small so each egg bite is sure to have some of that yummy sausage taste.

    In a bowl, whisk together the eggs and milk. Then stir in all the other ingredients: chopped spinach and green onions, shredded cheese, the sausage, plus salt and pepper.

    Transfer to egg cups. I have 2 different styles I use. The blue mold makes 7 small egg bites, which would be great for children. You will, however, have some of the mixture left over with this mold.

    The larger egg poachers hold more of the egg bite mixture. A set of 4 of these molds will hold all the mixture, and is probably more practical if you are meal prepping for just yourself.

    Sprinkle a little more cheese on top of each egg bite. This is technically optional but who can resist a little browned cheese on top of an egg bite? Not me!

    Place the molds in the air fryer basket and air fry for 15 minutes at 375°F. The egg bites will puff up considerably, which is why I did not fill the molds to the top before cooking.

    Serving Suggestions

    My favorite way to make these is to use the air fryer to make the breakfast sausage patties first, while I start mixing this up. Take 2 of the patties, cool slightly and cut them up. Add to the mixture and air fry away.

    Then serve the egg bites with a side of sausage for a delicious and hearty breakfast!

    Variations and Substitutions

    Egg bites are so easy to customize! Sometimes I like to add a little chopped tomato for a different taste. Next time I have some leftover cooked broccoli I might add that to the mixture. It's a great way to sneak in some veggies to your breakfast!

    I've also used different types of shredded cheese. My favorite is Cheddar-Jack but I also use 4-Cheese Mexican when I have that on hand. I like blends that include cheddar for the stronger flavor, and Monterey Jack for its creaminess. But use your favorite, by all means!

    Ingredients
      

    • 4 eggs large
    • ¼ cup milk
    • ¼ teaspoon salt to taste
    • ⅛ teaspoon black pepper to taste
    • 1 cup baby spinach (a large handful) chopped
    • 1 green onion chopped
    • 3 ounces pork sausage cooked and chopped
    • ⅓ cup shredded cheese plus more for topping

    Instructions
     

    • Whisk the eggs and milk in a mixing bowl. Season with salt and pepper, to taste.

    • Stir in the chopped spinach, green onion, sausage, and shredded cheese.

    • Place silicone egg mold in your air fryer basket and then fill about ⅔ full with the egg mixture. Sprinkle a little more shredded cheese on top of each.
    • Air fry for 15 minutes at 375°F.
    • Remove from air fryer, pop the egg bites out of the mold, and serve.
